Fast BBQ bacon-stuffed meat loaf

Farmer Doc loves meat loaf. Seriously. It’s one of his favorites. I was never really fond of just “plain old meat loaf.” So I look for ways to dress it up. And this one was a winner, for both of us!

First, cook 6 strips of bacon. Get them good and crisp, but not burnt. Drain most of the bacon grease, but leave just enough to saute 1/2 of an onion in.

Crumble 5 strips of bacon, and add them back to the onion to get everything good and warm and mixed together.

Meanwhile, in a large bowl combine:  3 slices of bread (cut off crusts, cut into cubes), 1 egg, 1/2 cup milk, the other 1/2 of the chopped onion, 1/2 cup chopped fresh parsley (or 2 tablespoons of dried parsley), 3 tablespoons barbecue sauce, 2 pressed cloves of garlic, 1/2 teaspoon salt, and 1/2 teaspoon pepper.

Add 1-2 pounds lean ground beef. Get in there with your hands to get everything good and mixed together.

In the bottom of your Deep Covered Baker (or other microwave-safe baking pan), shape 2/3 of the beef mixture into a loaf. Press a well in the center of the loaf.

Add 1/2 cup shredded cheddar cheese.

Add the bacon and onion mixture.

And top with another 1/2 cup shredded cheddar.

Add the rest of the beef mixture to the top, and press to seal.

Cover, and microwave (yes, microwave!) on high for 14-17 minutes, until internal temperature is 145 degrees F.

Top with more barbecue sauce, cover, and return to the microwave for another 3-5 minutes (until internal temperature is 160 degrees F).

Top with another 1/2 cup of shredded cheddar and the last strip of crumbled bacon.

Cover, and let sit for 10 minutes before slicing and serving.

Bacon, beef, barbecue sauce, cheese. Now that’s comfort food! (PS – this was even better as leftovers the next day!)
Want to do this in the oven instead of the microwave? Preheat the oven to 400 degrees, bake covered for 30-35 minutes until the internal temperature is 145 degrees F. Add barbecue sauce, cover, and return to the oven for another 5-7 minutes until the internal temperature is 160 degrees F.
